What does gluten-free mean?
The term "gluten-free" has nothing to do with the often confused glutamate or flavor enhancers.
Gluten intolerance
Those suffering from gluten intolerance have celiac disease, an autoimmune disorder. Affected individuals react to gluten, which their immune system mistakenly identifies as harmful, and therefore must rely on gluten-free products. But what does it mean to live gluten-free, and what foods are omitted?

The evil gluten protein
Gluten, also known as gluten protein, is a protein that occurs naturally in various grains such as spelt, wheat, rye, oats, barley, etc. This so-called "glue" is, among other things, responsible for the elastic consistency of dough, which is commonly used for bread or other baked goods.
Someone suffering from chronic inflammatory bowel disease (IBD) usually has to use gluten-free products. There are currently no studies that prove gluten is harmful to healthy people.
A gluten-free diet has nevertheless developed into a genuine health trend. However, completely eliminating gluten is rather detrimental for healthy individuals, as many also reduce their whole grain consumption with this diet. This often leads to a deficiency in B vitamins, which, among other things, protect our heart and are therefore essential for good health.
