What many people don't know is that glutamate is a naturally occurring component of almost all foods. Even the very first food a baby receives, breast milk, is a veritable glutamate bomb. Meat, fish, and especially tomatoes and Parmesan cheese contain high levels of glutamate. Glutamate also represents the so-called fifth taste. It's called "umami," which means delicious in Japanese. Unlike sweet, sour, salty, and bitter, glutamate has a unique flavor and is described as harmonious, savory, and meaty. The taste of glutamate is very pleasant and distinctive.

Yeast extract is primarily used in convenience foods and seasonings due to its aromatic and savory flavor. For a yeast-free diet, MAISTRO offers a wide variety of products that are formulated* to be free of yeast or yeast extract. These are labeled "yeast-free" on the packaging.
